Marjorie had a unique taste in food. She would put together different combinations that other people may think as weird. She would eat fruit with rice or vegetables with sweets, or maybe put chili in her hot chocolate! She liked experimenting and mixing flavors, which meant she was not picky with food at all. Her friends always joked that Marjorie have not found any food she did not like.
Being the adventurous eater that she is, Marjorie enjoyed a wide range of cuisines. When she was younger and more active as a member of the softball team, this did not really affect her weight. However, after getting married, and having three kids, the continuous eating combined with a sedentary lifestyle affected her weight tremendously.
Marjorie’s love for food made it hard for her to diet. She would have cravings and she would fail to stay on track. As she grew heavier, she also became more frustrated and ate more and more unhealthy stuff. This did not help her condition at all as she started having different health issues.
When Marjorie was unable to show up for her work for a straight week, she knew that she needed a more permanent, long-term solution for her health scares. At 43 years old, she knew that she was still young and she could still turn her life around.
This was when she decided to undergo weight loss surgery. At first, she was scared about the safety of the procedure, but she realized that if she stayed the same way, it will be more dangerous for her health.
Marjorie’s surgery went successfully and in 9 months, she was able to already lose a considerable amount of weight. She was also able to bring back her passion for cooking but now, she is ableto create weird combinations that are healthy too.
One of her favorite recipes is this chicken avocado burger. What’s unique about this is that the avocado is not used as a topping, instead it is folded with the raw ground meat before grilling the burger. Because the ground chicken is lean, the avocado serves as the fat source making the burger still juicy.
It may be unusual but try it to believe it!
Chicken Avocado Burger
You’ll Need: 1 lb ground chicken (or turkey) 1/2 ripe avocado, cubed 1/2 cup grated parmesan cheese 1 clove garlic, pressed 1/4 tsp each salt and pepper |
Cooking Method:
Cut the avocado half into chunks. Toss with parmesan cheese and garlic.
Fold the mixture into the ground chicken being cautious not to mash the avocado.
Form the mixture into 4 burger patties (or 6 smaller patties). Heat a grill pan on the stovetop to medium and grill on each side for about 5 minutes. Check the temperature is at 165F before serving.
